This is the time of the year when many communities living in different regions of India celebrate their new year festivals with families and food plays a huge role in these celebrations. The different cuisines cooked during these festivals are deeply connected to the regions – they are symbolic as well as manifest a culture of eating that has developed around the crops, vegetables, fruits, meat, fish etc grown in the region.
Ugadi is the new year festival of Karnataka. Bevu-bella is a special dish prepared during Ugadi to symbolise the myriad bitter sweet experiences of life and how each of us should take them in our stride.
For our April calendar, we focus on the main ingredients of bevu-bella – unripe mangoes, tamarind, jaggery and neem flowers – and look at their cultural, agricultural and scientific aspects.
